A rainbow of carrots

Carrots should be eaten on occassions other than in a carrot cake.


Carrots contain:


šŸ„•Vitamin A in the form of Beta carotene for eye health

šŸ„•Carotenoids lutein and zeaxanthin that serve as antioxidants

šŸ„•Potassium which helps to maintain healthy blood pressure

šŸ„•Vitamins B6, C, K

šŸ„•Fiber which lowers risk of cardiovascular disease and reduces "bad" cholesterol


Some of my favorite ways to enjoy carrots are:

šŸ„•As a crunchy raw snack with dip or hummus

šŸ„•Juicing carrots with apple, ginger, and a golden beet

šŸ„•Sauteed carrots with shredded cabbage and broccoli

šŸ„•Carrot ginger soup

šŸ„•Carrot salad or tossed in a leafy green salad with roasted beets

šŸ„•Roasted carrots and red onions

šŸ„•Coleslaw with lots of shredded carrots - with walnuts and raisins in a spicy sauce
