Carrots should be eaten on occassions other than in a carrot cake.
Carrots contain:
š„Vitamin A in the form of Beta carotene for eye health
š„Carotenoids lutein and zeaxanthin that serve as antioxidants
š„Potassium which helps to maintain healthy blood pressure
š„Vitamins B6, C, K
š„Fiber which lowers risk of cardiovascular disease and reduces "bad" cholesterol
Some of my favorite ways to enjoy carrots are:
š„As a crunchy raw snack with dip or hummus
š„Juicing carrots with apple, ginger, and a golden beet
š„Sauteed carrots with shredded cabbage and broccoli
š„Carrot ginger soup
š„Carrot salad or tossed in a leafy green salad with roasted beets
š„Roasted carrots and red onions
š„Coleslaw with lots of shredded carrots - with walnuts and raisins in a spicy sauce
